We received this FlyByJing Sichuan Chili Crisp - Xtra Spicy as part of a bundle containing a jar each of the four original FBJ chili crisps/sauces from Amazon. Our expectation was just a hotter version of the Fly By Jing Sichuan Chili Crisp – Original, but we found it to be more than that.

We were impressed. This could easily have been just the Original version with some extra chili heat and Sichuan pepper mala numbing, but FBJ appears to have made it more than that. The texture is slightly more coarse, but still not anything approaching crisp or crunchy. The fermented soybean takes on a larger role, even though its position in the order of ingredients remains unchanged. Although the majority of the solids are still muddy, there seems to be more of them, with the shallot being more readily apparent.

If there's one word we could say to compare it to the original version, it would be "more". Everything in the original is here, flavor-wise, just dialed-up about 20%. So, to sum up, if the original version seems tame to you, try this one. It's more in keeping with the flavor sensibilities of traditional Asian market-style Sichuan chili oil condiments.

We got this Fly By Jing Sichuan Chili Crisp - Xtra Crunchy, formerly known as "Chengdu Crunch", from Whole Foods during a promotional sale. That now-obsolete name (along with "Zhong Sauce" for the Sweet + Spicy variation) went into the dumpster after a marketing re-think.

If it's crunch you're looking for in a Fly By Jing product, this one has it. The "Xtra" part is puzzling as, to us, it implies the other FBJ offerings are crunchy, and this one is an order of magnitude crunchier. Having tried most of them, it's more accurate to say this one is crunchy whereas the others are not, really. Only the relatively new "Mild Crunchy Garlic" version (blue label), has the potential to also bring the crunch, but we haven't yet been able to obtain any to try.

We suppose the "Xtra" could allude to the fact that there are quite a number of solid ingredients not always found in a classic chili crisp (e.g. split peas, and pumpkin and sunflower seeds) that are being touted as "extra" compared to the crunch of normal chili crisps. Or, it could simply be that the solids-to-oil ratio is quite high compared to other FBJ offerings (~90% vs. 50-60%).

So, it is crunchy. But is it sweet, is it spicy? Yes to both. But the sweetness isn't cloying or intrusive, and it's well-balanced against the other elements of the flavor profile. Initially, we detected the Sichuan pepper only as a certain something lurking in the background. But we realized the sheer volume of solids had prevented us from really mixing things up well. Only once we were able to redistribute the finer solids, which had migrated to the bottom of the jar, did we get a sense of the overall flavor profile as intended.

We liked this one, and would get it again. It felt like a milder version of the Chuannan Peanut Chili Oil, whose bold Sichuan pepper heat and copious crunchy elements we really liked. For a more fragrant take with plenty of big crunch, also consider the NPG Sichuan Chili Crisp. Be aware, however, that both these alternatives contain MSG the Fly By Jing does not.

We're on the fence as to whether we agree this is a chili crisp. To us, it has more in common with some salsa machas, even though the seasoning profile is clearly Asian. We'll call it a crunchy oil instead.

This Chef Shu Chili Oil Sauce also came from that new Asian Market. It was another one new to us, and its ingredient list looked promising. Yes, the label does say "Chili Oli Sauce". Let's see how it tastes.

This jar was made to travel. Rather than a plastic shrink seal around the lid, the entire jar is encased in one. Smart. We've all encountered a leaky jar of chili crisp a time or two.

There are a lot of sesame seeds here, and together with the warm, slow-burn chili heat, they dominate the flavor. There's enough oil to allow a good portion of them to float up to the surface, so mix well.

There's a bit of málà numbing from the Sichuan pepper, but the onion, ginger and garlic are mostly subdued in the mix. The peanut is coarsely ground, and, going by the order of ingredients, we thought there would be more of it. We didn't get any real sense of sweetness from the sugar. The paprika we suspect is more for color.

No real complaint to be made here. $3.99 for a big 8oz. jar is a bargain for a more than serviceable chili oil. Despite its relatively high ratio of solids to oil, we're somewhat on the fence about characterizing it as a chili crisp.

We bought this NPG Sichuan Chili Crisp from Amazon after trying the NPG Sichuan Chili Oil. That one was about as close to being a chili crisp without actually being one as we could imagine. We hoped we would like this one as well.

Translated, the upper character reads: 红 "hóng, red", the lower 油 "yóu, oil".

This one is super thick and crunchy. At first, we thought the peas and peanuts were just floating on the top, but, no, it's too thick. It's like the solids are just coated in oil, rather than immersed in it. The fragrant aroma of fermented black bean is apparent when opening the jar.

New to us is the inclusion of crispy, crunchy peas. The peanuts are mostly unbroken halves. The fermented black beans are dense and chewy. The sesame seeds are not plentiful, but you can taste them through the pepper.

The application of Sichuan pepper is once again even-handed. It supplies a moderate, lingering heat on the palate, not overwhelming the flavors of the copious solids. The sugar adds a bit of roundness that plays well with the heat and enhances the nuttiness of the sesame and peanuts. While not explicitly listed, we thought we detected star anise among the unnamed "spices".

Sodium is a low 137mg. per tablespoon, so not really that salty at all. Any higher, we thought, would have taken away from the complexity of everything else.

Normally $9.99, we got this one for $7.99 on sale. If you're interested in trying something different from the typical shallot/garlic/chili, this is one to consider. We're going to enjoy working our way through this jar.

While this NPG Sichuan Chili Oil doesn't say "chili crisp" on the label, it certainly seems to qualify as one. NPG does, in fact make a product they call Sichuan Chili Crisp, but it is labeled as being milder than this one. Normally $11.99, we paid $8.48 on sale at Amazon.

The upper characters translate as: 拌 "bàn, mix, for mixing", 菜 "cài, vegetables, salad". The lower characters read: 红 "hóng, red", 油 "yóu, oil".

This one is super thick and chewy. According to the label, it shouldn't be. There seems to be nothing in the first few ingredients on the list to support how coarse and plentiful are the chili-like solids here. However, further research reveals that pixian broad bean paste, a condiment unto its own, is made with a fair amount of chili pepper. So, what we're getting texturally must be the the skins of those beans and the chilis used to make it.

Peanut and sesame seed are listed, but they aren't visually apparent, nor easily identifiable on the palate. Only under close inspection are they revealed.

The application of Sichuan pepper is even-handed. The numbing effect it's known for isn't flagrant, and its spice works well with other, aromatic components. Together, there is a fragrant, floral, fruity heat that makes this one quite special. Did we just use the word flagrant in one sentence and the word fragrant in the next? Yes. Yes, we did.

At this point, we're going to backtrack a bit. Based on the lack of onion, shallot or actual soybean, we're going to rethink considering this one a chili crisp, and let the chili oil designation stand. But that doesn't mean we didn't like it.

Note to salsa macha lovers. If you like the La Anita Salsa Macha - Morita Pepper, you definitely need to try this one.

This Simply Asia Chili Crunch came from Amazon where, as part of the Big Spring Sale, it was marked down to $7.74, allegedly 20% off. Ironically, it was spotted as a new item at a local Walmart before the Amazon order arrived on our doorstep.

Simply Asia calls it "chili crunch", a term that received a whole bunch of publicity when a competitor acquired the trademark for it, then started sending out cease and desist letters to anyone else using what had long been considered a generic term. That competitor has since reconsidered the wisdom of that move.

The initial appearance is of a typical chili crisp. Abundant chili flakes and shallot for the solids are reasonably coarse, providing a satisfactory textural experience. Soybeans are way down the ingredient list, and we had to go fishing to find some. They are crunchy, not fermented. The solid-to-oil ratio here is moderately high, but still with enough oil you really need to stir it up before spooning some out.

The overall flavor profile is well-balanced. Onion-y umami, moderately spicy chili, a subtle hit of Sichuan pepper, and a hint of sweetness to round it all out. Saltiness is low, and we can't fathom how a product listing salt as even a minor ingredient can claim 0mg. sodium, but that's what the label and website both say.

Even though not as solids-heavy, flavor profile comparable to Lao Gan Ma Spicy Chili Crisp.

We liked this one for its accessible flavor, and look forward to having it be available as a regular item at the local Wally World.

This Roland Foods Spicy Chili Onion Crisp came from a local supermarket. It was the only such product they stocked, I'm sure only because Roland is pretty much a supermarket brand. That and the store in question is more of an old-school family-run operation which caters to an older clientele. You rarely see any trendy stuff in the international sections there.

We were pleasantly surprised by this one. It's onion-forward, but the chili pepper and garlic play well into the mix. The aromatics aren't as obvious, unless you're really looking for them, but they round out the overall flavor profile nicely. The salt level is low, and, for those who appreciate it, there's no MSG.

We thought the texture was really good. The mixture is thick with medium-weight solids that provide a satisfying crunch.

We categorize it as a crunchy oil, but in reality, it has a lot in common with a Japanese taberu rayu. If it were more garlic-forward and a little saltier, a blind taste test might mistake it for one.

Compare to Trader Joe's Crunchy Chili Onion, similar in style and price.

Fly By Jing Sichuan Chili Crisp - Original is one of the spicier takes on the condiment. It is based on a blend of rapeseed (canola) and soybean oils. The "original" version packs a significant amount of heat due to the Sichuan peppercorn content, which can have a numbing effect on the lips and tongue. This effect is considered a positive. Fly By Jing Sichuan Chili Crisp - Original is perhaps among the most visible brands of Sichuan chili crisps, due to its availability at even Walmart. A collaboration with the Fishwife brand of premium tinned seafoods also brought it higher awareness in that popular market segment.

The ratio of crunchy bits to oil is lower in the Fly By Jing. The solids are also much finer than others compared here. Some are even powdery fine, giving it a muddy consistency. As such, you'll really want to stir it up well, right before serving. Each and every time you spoon some out, in fact. The serving size is a spare one teaspoon. You'll likely use more than that. Maybe not two tablespoons, but certainly more than just a teaspoon.

The flavor profile is quite complex. In addition to the up-front Sichuan chili heat, the black bean, garlic, shallots, ginger and other unnamed spices provide a panorama of palate pleasers.

You may encounter an earlier version of the Original label, which, as of this writing, is still within "sell by" dating. It contains a considerable amount of verbiage about the creator, Jing "Jenny" Gao, her name and her life experience. The updated label has eliminated that and the ambiguity of the former, now stating "Original" clearly.

In addition to the Original, there are also Sweet & Spicy, Xtra Crunchy and Xtra Spicy versions. Original and Sweet & Spicy are considered "medium". The Xtra Crunchy is "mild", and the Xtra Spicy is "very spicy". Notably, but inconspicuously, MSG is absent in all versions, its umami role replaced by mushroom powder.
