Welcome to Chili Crisp Central

Chili Crisp Central is an independent enthusiast publication devoted to chili crisp, chili oil, crunchy oils, taberu rayu, salsa macha and the many other chile-based condiments found around the world.

We started Chili Crisp Central because the world of chili-infused condiments is considerably more interesting—and considerably more complicated—than it might first appear.

What began as an interest in chili crisp quickly turned into a fascination with the enormous variety of products now available. Some are fiery. Some are surprisingly mild. Some are loaded with fried garlic or shallots. Others emphasize Sichuan pepper, fermented black beans, peanuts, sesame seeds, mushrooms or spices. Some are genuinely crunchy; others are really chili oil wearing a "crisp" label.

And that's where we come in.

More Than 65 Jars—and Counting

We've personally tasted and evaluated more than 65 chili crisps and related condiments, with new products added regularly.

For each product, we look beyond the front label and marketing description. We examine the ingredients, identify the oil and major flavor components, consider the proportion and character of the solids, and—most importantly—taste the product ourselves.

Our reviews consider things such as:

  • Solids-to-oil ratio

We don't expect every chili crisp to be the hottest, crunchiest or most complicated product on the shelf. We're interested in what makes each one distinctive and whether the finished condiment actually works.

Beyond the Jar

Chili Crisp Central is also a resource for understanding the ingredients and traditions behind these products.

Our reference articles explore everything from Sichuan peppercorns, arbol chiles and gochugaru to douchi, doubanjiang, garlic, fried shallots, sesame seeds and the various oils used to make chili condiments.

We also look at the history and cultural background of chili-based condiments, differences among regional styles, labeling and terminology, nutrition, cooking applications and the sometimes confusing distinctions between chili crisp, chili oil and related products.

In other words, we're interested in both what's in the jar and why it's there.

Our Approach

Chili Crisp Central is an enthusiast publication, not a laboratory or a professional sensory-analysis organization. Our ratings and tasting notes represent our own observations and preferences.

We try to be consistent in the way we evaluate products, but we also recognize that taste is subjective. A condiment that one person finds too salty may be exactly what another person wants. A very hot chili crisp isn't necessarily a better chili crisp.

Our goal isn't to tell you what you should like.

It's to give you enough useful information to decide what you might like.

Independent Editorial Perspective

We don't simply repeat manufacturer descriptions or retailer reviews. When we disagree with a product's marketing description, we'll say so.

  • If something sold as "chili crisp" doesn't seem particularly crisp, we'll tell you.
  • If two versions of what appears to be the same product contain different oils or ingredients, we'll investigate.
  • If a product surprises us—in either direction—we'll explain why.

That's the fun of tasting them.

About the People Behind the Reviews

Chili Crisp Central is created and edited by Doug D, a longtime food enthusiast with a particular interest in chile-based condiments, Asian ingredients and the ways traditional foods evolve as they move around the world.

The site also uses the editorial voices of Sal, Cris and Ray to provide different perspectives on the products we review. Each is a composite of actual people we've met while acquiring samples, food writers or like-minded friends, who've shared their knowledge and information or inspired us to dig deeper.

Why "Central"?

Because there is a lot to explore.

Chili crisp is no longer a single condiment from a single culinary tradition. It has become a broad and rapidly evolving category, with products inspired by Chinese, Japanese, Mexican, Southeast Asian and other culinary traditions—and plenty of new interpretations that don't fit neatly into any existing category.

We're here to explore all of it.
